If you haven't read it or if you have an Alzheimer type of memory and can't remember if you read it maybe 40 years ago, checkout Exodus by Leon Uris. (I think I'm going to reread my copy if I can find it in the basement.)
It is about the struggle of establishing the State of Israel and goes into the history preceding the war that followed.. (and has gone on on and on and,,)

If you want to try some non-fiction, this is good. Fromkin covers more than the Balfour Declaration. The book it doesn't cover contemporary events (post-Versailles Treaty period), but it does provide background information for understanding current events in the Middle East.
